Risotto is prepared as follows: leave out a knob of butter in a saucepan and add the risotto mixture. Sweat the risotto for about 2 minutes over low heat, stirring constantly. Pour in a glass of white wine and stir the mixture until the wine has evaporated. Then add a little broth a little at a time (500ml total) and leave on the stovetop over low heat for 13-14 minutes, stirring occasionally.

This risotto Boscaiolo is so flavorful on its own that all you have to do is add a little Parmesan cheese and extra virgin olive oil, if you like, to bring a delicious original risotto to the table.
