Zubereitung

  1. Peel the banana, cut it into pieces and place it in a tall container with the beaten egg. Add a generous pinch of salt, oat flakes, milk and the extra virgin olive oil with orange and puree everything with a hand blender into a smooth dough.
  2. Heat some oil in a pan and fry small pancakes in batches over medium heat until golden brown on both sides.
  3. Spread one pancake per serving with pistachio spread and place a second one on top. Finish with a generous dollop of yogurt, a smaller dollop of pistachio spread and finally blueberries for decoration
