Oil & Vinegar has selected the finest balsamic vinegar varieties for you from the best vinegar houses in Modena, Italy. Naturally aged, without the addition of sugar, caramel, or preservatives! The balsamics are evaluated based on production methods (Travasi versus Solera), density (viscosity), and aging time (number of years): Rosso, Bronze, Silver, and Gold.
This Aceto Balsamico di Modena IGP Bronze comes from the traditional vinegar house Casa Emilia, which has preserved the secret recipes and traditions of balsamic production for decades. With a density of 1.25 and produced using the Solera method, this fruity-sweet balsamic vinegar is a true delight. The grape must comes from Trebbiano grapes and ages in chestnut wood barrels.
"Enjoy the Aceto Balsamico di Modena IGP Bronze with meat, fish, cheese, or in salads. It is best to add it only at the end of the preparation so that the dish retains its full aroma."
"The longer the balsamic vinegar ages, the thicker it becomes. The thickness is expressed in a density value: the higher the value, the thicker and older the balsamic – and the more complex its flavor."
In the Solera method, a 220-liter wooden barrel is used, which is topped up with fresh grape must after each harvest. In contrast, the Travasi method uses different wooden barrels, allowing the balsamic vinegar to absorb the flavors of the various types of wood.
The designation IGP ("Indicazione Geografica Protetta") is a protected quality mark for regional products. A balsamic vinegar may only be called Aceto Balsamico di Modena IGP if it has been tested and approved by the Italian consortia and the European Union. This certification guarantees the traditional production method and the highest quality.
