This creamy, sweet and full-bodied balsamic vinegar from the Giuseppe Giusti vinegar house in Modena has matured for years in various wooden barrels. Awarded the Silver quality mark. The Aceto Balsamico di Modena IGP Silver comes from the Giuseppe Giusti vinegar house. Since its founding in 1605, the 17th generation has been in charge and the tradition, the centuries-old natural recipes and production processes are still strictly adhered to. In total, the Giuseppe Giusti vinegar house has 1,200 wooden barrels, half of which date from the 15th, 16th and 17th centuries. For hundreds of years, these barrels have been imbued with the aromas and flavors of grape must and wine vinegar made from the best Trebbiano and Lambrusco grapes. Maturation takes about ten years, which means that this creamy balsamic vinegar reaches a density of no less than 1.33 to 1.35.
Of course, the maturation takes place according to an old procedure called Travassi over a series of increasingly smaller barrels made of different types of wood: oak, chestnut, ash, cherry, mulberry and juniper. Each type of wood gives the balsamic its own aroma and taste. All this explains the aromatic, full-bodied and intense body of this Aceto Balsamico di Modena IGP Silver. Initially, a sweet taste leads the overtone, while later flavors of oak, nut, honey and plum can also be tasted.
