Very special herbal vinegar from the South African Rozendal estate. Completely naturally made from years-aged red wine vinegar and organic lavender. This lavender vinegar is made from grape must, red wine vinegar and lavender and produced with a lot of patience and respect for nature and tradition: hand-made and organic.
Red wine matures for three weeks in old oak barrels at a temperature of 30°C, so that it ferments naturally - instead of quickly and forcefully - into vinegar. This process is also known as the Slow Orleans method.
The wine vinegar then continues to mature for years - in this case even 12 years! - according to the Solera method. This involves systematically transferring certain amounts of vinegar into other barrels with different degrees of maturity so that the older vinegar gives off its color, taste and aroma to the young vinegar. This guarantees a complex vinegar with a full flavor.
By adding organic lavender, grown on the Rosendal estate and processed according to an old family recipe, this pure, honest and aromatic lavender vinegar is created! A palate-pleasing combination awaits you, the likes of which you have never experienced before.
Lavender vinegar goes wonderfully with salad. A nice suggestion is a salad with goat cheese and strawberries. Another tip from the house is to use the lavender vinegar as a reduction for grilled lamb or game. To do this, heat vinegar in a small pot until it caramelizes slightly into a syrupy sauce. Really fantastic!
