In the Gragnano region of Italy, high-quality pasta has been traditionally produced for over 500 years. Mafaldine are long ribbon noodles with crimped or wavy edges that can hold a lot of pasta sauce.
The secret in production lies in the use of the best durum wheat semolina, which makes the pasta particularly dimensionally stable, and pure, soft spring water from the mountains of Gragnano. In addition, the pasta is pressed through bronze pasta molds and then dried particularly slowly, which gives it its roughness and allows the sauce to adhere particularly well.
Beetroot, tomatoes and spinach provide the natural color (of the Italian flag!). This pasta is preferably eaten with traditional meat sauces such as Bolognese or fine ragú.
