The complex Nocellara is produced by the family company Oleificio San Calogero, which has been dedicated to the production of excellent olive oil with passion and commitment for generations.
The company was founded in 1923 by Giuseppe Santangelo. At that time the estate had around 300 olive trees, the olives from which were crushed using a wooden oil mill with stone wheels, operated by donkeys. Those were different times! In the years that followed, the press system was constantly improved and in 1993 a state-of-the-art system was installed. The entrepreneurial family is still responsible for the entire production process from growing the olives to pressing and bottling the olive oil.
The traditional Nocellara del Belice olives are typical of Sicily and are among the best in Italy. That is why this single-variety olive oil is also something very special. It is incredibly fruity and full of flavor with a delicate, nutty aroma.
Use
The Nocellara goes wonderfully with hearty meat dishes, e.g. g. beef, with grilled vegetables, tart salads and seafood.
Dressing Tip
Very fine in combination with sherry vinegar, date or peach agrodolce/vinegar, elderflower-lime agrodolce, im Ratio 1/3 vinegar/agrodolce, 2/3 olive oil.
