Trofie is a pasta specialty from Liguria, the coastal region of northwestern Italy around Genoa. There the trofie are usually served with pesto Genovese. The sauce sticks particularly well to this type of pasta due to its twisted shape. The typical Italian combination of pasta, potatoes, beans and pesto also tastes incredibly delicious. Just try it out!

Trofie pasta is made from just two ingredients: durum wheat semolina and water. The dough is turned into the typical shape by skilled hands. The name comes from the Genoese dialect word strofissià, which describes the hand movement when shaping the pasta. When cooked, the trofie triple in size. Trofie have been eaten in Italy for over 200 years. Try them with a delicious pistachio pesto, a creamy pasta sauce or with classic Bolognese, preferably with freshly grated Parmesan.
