The small Taggiasca olive is one of the best known and most popular olives in Italy and comes from Liguria. Despite its size, it is very rich in oil and is therefore very suitable for olive oil production. It is harvested a little later in the season and its color ranges from green to dark purple or even brown. It is very tasty with a velvety texture, making it the perfect snack olive for an aperitif. It is ideal for starters such as bruschetta, on pizza and with pasta.
