This vincotto was made from preserved Negroamaro and Malvasia grapes in which figs have ripened for six months. Perfect with meat, fish, carpaccio, cheese, fruit salad and ice cream.
Vincotto Fig is an incomparable product made from two types of grapes, the Negroamaro and the red Malvasia. The grapes are boiled down to a fifth of their volume. The resulting syrup is poured into oak barrels together with the mother bacteria of the vinegar, where it matures for four years. This develops the taste into a vincotto without the addition of colors or preservatives. Vincotto Fig is made from specially selected figs that have been aged for six months in a mixture of Vincotto Originale and vinegar. With balsamic vinegar, the grape must is not boiled down and there is no specific ripening time involved, as older grape must is mixed with younger grape must.
Vincotto Fig is a real culinary delight that can be used in various dishes with its variety of flavors.
